Why is forest honey darker and less sweet? +

Because it doesn't come from a flower. Bees create forest honey (honeydew honey) from honeydew they collect from the leaves of forest trees, not from floral nectar. That's why it's darker, thicker and less sweet — and significantly richer in minerals and iron than light honeys.

My honey crystallised quickly — is it spoiled? +

The opposite — it's a sign of top quality. Forest honey naturally crystallises quickly, and honey that never crystallises has almost always been heated or mixed with syrup. If you want it liquid again, warm the jar in a bowl of warm water (below 40°C) — the enzymes stay intact.

How is it used and how much? +

The recommendation is one tablespoon a day. It's best consumed on its own, held in the mouth until it dissolves, or stirred into lukewarm milk or tea. Avoid high temperatures (above 40°C) to preserve all the nutrients.
